You can’t get any simpler than this recipe! Ten minutes of time and you have a healthy, inexpensive and delicious dinner.
3 cans great northern beans, or 1 pound great northern beans soaked over night
1 pound boneless diced chicken
1 medium onion, diced
8 ounces diced green chilies (or 2-4 jalapenos if you want more heat)
2-4 minced garlic cloves
2- 14 ½ ounce can of chicken broth
1 14 1/2 ounce can of diced tomatoes
1 TBSP cumin
½ tsp salt
1 tsp chili powder
In a four quart pot, saute onion in 1 Tbsp oil until soft and then add all other ingredients. Simmer (with lid on) 30 minutes if using canned beans, if using soaked raw beans add another 30 minutes or until beans are thoroughly cooked.
If using a slow cooker, combine all ingredients in slow cooker and cook on Low 8-10 hours or High 5-6 hours
Top with fresh cilantro, sour cream, cheese, tortilla chips
*if using soaked beans, may need to add up to 1 cup of additional water during cooking time.
